Ingredients

  • 4 egg whites
  • 200g caster sugar
  • 100g ground almonds
  • 2 tbsp amaretto liqueur
  • 1 tsp cornstarch
  • 1 cup strawberries, sliced
  • 1 cup cherries, pitted and halved

Instructions

  1. Preheat the oven to 120°C (250°F) and line a baking tray with parchment paper.

  2. In a clean mixing bowl, whisk the egg whites until stiff peaks form.

  3. Gradually add the caster sugar, whisking continuously until the mixture is thick and glossy.

  4. Gently fold in the ground almonds, amaretto liqueur, and cornstarch until well combined.

  5. Spoon the meringue mixture onto the prepared baking tray, shaping it into a round cake shape.

  6. Bake for 1 hour, then turn off the oven and leave the meringue inside to cool completely.

  7. Once cooled, top the meringue with sliced strawberries and halved cherries.

  8. Serve immediately and enjoy!
