Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tsp of dried oregano
  • 2 tsp of dried basil
  • 1 tsp of garlic powder
  • 1 tsp of paprika
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 2 tbsp of olive oil
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of pitted kalamata olives, sliced
  • 1/4 cup of crumbled feta cheese
  • 2 tbsp of fresh parsley, chopped

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a small bowl, mix together the dried oregano, dried basil, garlic powder, paprika, salt, and black pepper.

  3. Rub the chicken breasts with the spice mixture, making sure to coat both sides.

  4. Heat the olive oil in a large oven-safe skillet over medium heat.

  5. Add the chicken breasts to the skillet and cook for 4-5 minutes per side, until browned.

  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

  7. Remove the skillet from the oven and top the chicken with the cherry tomatoes, kalamata olives, and feta cheese.

  8. Return the skillet to the oven and bake for an additional 5 minutes, or until the cheese has melted.

  9. Sprinkle with fresh parsley before serving.
