Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 large eggplant, sliced into rounds
  • 3 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • 1/2 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Season the chicken breasts with salt, pepper, and paprika.

  3. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.

  4. Add the chicken breasts to the skillet and cook for 4-5 minutes on each side, until browned.

  5. Transfer the chicken to a baking dish and set aside.

  6. In the same skillet, add 1 tablespoon of olive oil and heat over medium heat.

  7. Add the minced garlic and cook for 1 minute, until fragrant.

  8. Add the eggplant slices to the skillet and cook for 2-3 minutes on each side, until lightly browned.

  9. Remove the skillet from the heat and arrange the eggplant slices on top of the chicken breasts in the baking dish.

  10. In a small bowl, mix together the dried oregano, basil, thyme, and a pinch of salt and pepper.

  11. Sprinkle the herb mixture over the chicken and eggplant.

  12. Cover the baking dish with foil and bake for 25 minutes, or until the chicken is cooked through and the eggplant is tender.

  13. Remove the foil and broil for an additional 3-5 minutes, until the chicken is golden brown.

  14. Serve the Mediterranean Chicken with Eggplant hot and enjoy!
