How To Make Menudo

Ingredients

  • 1.5 pounds beef tripe, cleaned and cut into small pieces
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons oil
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 4 cups beef broth
  • 1 bay leaf
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, diced onion, lime wedges

Instructions

  1. In a large pot, heat the oil over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent.

  2. Add the beef tripe to the pot and cook for about 10 minutes, stirring occasionally.

  3. Add the diced tomatoes, tomato sauce, chili powder, paprika, cumin, dried oregano, bay leaf, salt, and pepper. Stir well to combine all the ingredients.

  4. Pour in the beef broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 2.5 to 3 hours, until the tripe becomes tender.

  5. Remove the bay leaf from the pot. Taste and adjust the seasoning with salt and pepper if needed.

  6. Serve the menudo hot, garnished with chopped cilantro, diced onion, and lime wedges. It can be enjoyed with corn tortillas or rice.
