This is a delicious bread recipe with a coconut flavor and texture that’s perfect for breakfast or snack time.

Ingredients

  • 1 1/2 cup all-purpose flour
  • 1/2 cup sugar
  • 1/4 cup shredded sweetened coconut
  • 1/4 cup shredded unsweetened coconut
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 cup coconut milk
  • 1/4 cup coconut oil, melted

Instructions

  1. Preheat the oven to 350°F.

  2. In a large bowl, mix together the flour, sugar, sweetened and unsweetened coconut, baking powder, and salt.

  3. In a separate bowl, whisk together the egg, coconut milk, and melted coconut oil.

  4. Pour the wet ingredients into the dry ingredients and stir until well combined.

  5. Pour the batter into a greased 9×5 inch loaf pan.

  6. Bake in the preheated oven for 45-50 minutes, or until a toothpick comes out clean.

  7. Let the bread cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
