How To Make Fig Newtons Thumbprint Cookies
Delicious cookies filled with sweet fig jam and a crunchy almond topping.
Serves:
Ingredients
- 1 cup all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter (softened)
- 1/4 cup white sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
- 1/4 cup fig jam/fruit spread
- 1/4 cup almonds (chopped)
Instructions

Preheat oven to 350°F (180°C).

In a small bowl, sift together flour, baking powder, and salt.

In a separate bowl, cream together butter and sugar until smooth.

Beat in egg yolk and vanilla extract until well combined.

Gradually mix in the flour mixture until dough forms.

Roll tablespoon-sized balls of dough and place on a lined baking sheet.

Using your thumb, make an indentation in the center of each cookie.

Fill each indentation with a small spoonful of fig jam.

Top each cookie with chopped almonds.

Bake for 12-15 minutes or until golden brown.

Allow cookies to cool before serving.
