How To Make Fig Newtons Thumbprint Cookies

Delicious cookies filled with sweet fig jam and a crunchy almond topping.

Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup white sugar
  • 1 egg yolk
  • 1/2 tsp vanilla extract
  • 1/4 cup fig jam/fruit spread
  • 1/4 cup almonds (chopped)

Instructions

  1. Preheat oven to 350°F (180°C).

  2. In a small bowl, sift together flour, baking powder, and salt.

  3. In a separate bowl, cream together butter and sugar until smooth.

  4. Beat in egg yolk and vanilla extract until well combined.

  5. Gradually mix in the flour mixture until dough forms.

  6. Roll tablespoon-sized balls of dough and place on a lined baking sheet.

  7. Using your thumb, make an indentation in the center of each cookie.

  8. Fill each indentation with a small spoonful of fig jam.

  9. Top each cookie with chopped almonds.

  10. Bake for 12-15 minutes or until golden brown.

  11. Allow cookies to cool before serving.
