A delicious fruit and cake bar perfect for a sweet snack.

Preparation: 30 minutes
Cooking: 35 minutes
Total: 1 hour and 5 minutes

Serves:

Ingredients

  • 1 cup dried figs
  • 1/4 cup honey
  • 1/4 cup water
  • 1 tsp lemon juice
  • 1/2 cup all-purpose flour
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 2 tbsp unsalted butter
  • 1/4 cup brown sugar
  • 1 egg
  • 1/2 tsp vanilla extract
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (180°C).

  2. In a medium saucepan, combine figs, honey, water, and lemon juice. Cook over medium-high heat, stirring occasionally, until figs are soft.

  3. Remove from heat and puree mixture in a blender or food processor until smooth.

  4. In a medium bowl, whisk together flour, baking powder, and salt.

  5. In another bowl, beat butter and brown sugar with an electric mixer until creamy.

  6. Beat in egg and vanilla extract.

  7. Gradually mix in flour mixture until dough forms.

  8. Divide dough in half and roll each half into a rectangle that’s approximately 1/4 inch thick.

  9. Spread fig mixture over each rectangle, leaving a 1/4 inch border on all sides.

  10. Roll up each rectangle like sushi, pressing edges to seal.

  11. Place rolls seam-side down on a baking sheet, and bake for 25-30 minutes or until golden brown and firm.

  12. Let cool for 10 minutes, then slice into bars.

  13. Dust with powdered sugar if desired.
