How To Make Homemade Fig Newtons
A delicious fruit and cake bar perfect for a sweet snack.
Serves:
Ingredients
- 1 cup dried figs
- 1/4 cup honey
- 1/4 cup water
- 1 tsp lemon juice
- 1/2 cup all-purpose flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2 tbsp unsalted butter
- 1/4 cup brown sugar
- 1 egg
- 1/2 tsp vanilla extract
- Powdered sugar for dusting (optional)
Instructions
-
Preheat oven to 350°F (180°C).
-
In a medium saucepan, combine figs, honey, water, and lemon juice. Cook over medium-high heat, stirring occasionally, until figs are soft.
-
Remove from heat and puree mixture in a blender or food processor until smooth.
-
In a medium bowl, whisk together flour, baking powder, and salt.
-
In another bowl, beat butter and brown sugar with an electric mixer until creamy.
-
Beat in egg and vanilla extract.
-
Gradually mix in flour mixture until dough forms.
-
Divide dough in half and roll each half into a rectangle that’s approximately 1/4 inch thick.
-
Spread fig mixture over each rectangle, leaving a 1/4 inch border on all sides.
-
Roll up each rectangle like sushi, pressing edges to seal.
-
Place rolls seam-side down on a baking sheet, and bake for 25-30 minutes or until golden brown and firm.
-
Let cool for 10 minutes, then slice into bars.
-
Dust with powdered sugar if desired.
