How To Make Baja Fresh Veggie Quesadilla Recipe
A delicious and healthy quesadilla loaded with fresh vegetables and cheese.

Ingredients
- 4 large flour tortillas
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 1 small red onion, thinly sliced
- 1 zucchini, thinly sliced
- 2 cups shredded Monterey Jack cheese
- 1 tbsp olive oil
Instructions

Preheat a large skillet or griddle over medium heat.

Place a tortilla on the skillet and sprinkle with cheese.

Add a layer of red bell pepper, green bell pepper, red onion, and zucchini.

Top with another layer of cheese and place another tortilla on top.

Brush the top with olive oil.

Cook for 2-3 minutes per side or until cheese is melted and tortilla is golden brown.

Repeat with remaining ingredients.
