How To Make Baja Fresh Chicken Tortilla Salad

A delicious and colorful salad packed with protein and Mexican flavors.

Serves:

Ingredients

  • 2 chicken breasts, grilled and sliced
  • 4 cups of lettuce, chopped
  • 1 cup of black beans, rinsed and drained
  • 1 cup of corn (fresh or from a can)
  • 1 tomato, diced
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 1/4 cup of cilantro, chopped
  • 1/2 cup of cheese, shredded
  • 2 cups of tortilla chips, crushed
  • 1/4 cup of lime juice
  • 1 tbsp of olive oil
  • 1/2 tsp of cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together the lettuce, black beans, corn, tomato, red onion, avocado, cilantro, cheese, and crushed tortilla chips.

  2. In a small bowl, whisk together the lime juice, olive oil, cumin, salt, and pepper to make the dressing.

  3. Add the sliced chicken to the salad and drizzle the dressing over the top.

  4. Toss everything together until well combined.

  5. Serve immediately and enjoy!
