How To Make Baja Fresh Grilled Chicken Salad
A fresh and flavorful salad made with grilled chicken, veggies, and a zesty dressing.
Serves:
Ingredients
- 1 pound boneless, skinless chicken breast
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cumin
- Salt and pepper, to taste
- 8 cups mixed greens
- 1 red bell pepper, sliced
- 1/2 red onion, sliced
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- dressing:
- 1/4 cup olive oil
- 2 tablespoons white wine vinegar
- 1 tablespoon honey
- 1 garlic clove, minced
- Salt and pepper, to taste
Instructions

Preheat grill to medium-high heat.

In a small bowl, mix together olive oil, chili powder, garlic powder, cumin, salt, and pepper. Rub mixture over chicken breasts.

Grill chicken for 6-7 minutes per side, or until cooked through. Let cool for a few minutes, then slice into strips.

In a large bowl, combine mixed greens, red bell pepper, red onion, avocado, and cilantro.

To make dressing, whisk together olive oil, white wine vinegar, honey, garlic, salt, and pepper in a small bowl.

Drizzle dressing over salad and toss to combine.

Top salad with sliced grilled chicken and drizzle with lime juice.
