Ingredients

  • 1 pound boneless, skinless chicken breast
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste
  • 8 cups mixed greens
  • 1 red bell pepper, sliced
  • 1/2 red onion, sliced
  • 1 avocado, sliced
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • dressing:
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 1 tablespoon honey
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions

  1. Preheat grill to medium-high heat.

  2. In a small bowl, mix together olive oil, chili powder, garlic powder, cumin, salt, and pepper. Rub mixture over chicken breasts.

  3. Grill chicken for 6-7 minutes per side, or until cooked through. Let cool for a few minutes, then slice into strips.

  4. In a large bowl, combine mixed greens, red bell pepper, red onion, avocado, and cilantro.

  5. To make dressing, whisk together olive oil, white wine vinegar, honey, garlic, salt, and pepper in a small bowl.

  6. Drizzle dressing over salad and toss to combine.

  7. Top salad with sliced grilled chicken and drizzle with lime juice.

  8. Serve and enjoy!
