How To Make One-pot Chicken & Curry Rice

Ingredients
- 4 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 cups of white rice
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 carrot, diced
- 2 tablespoons of curry powder
- 1 teaspoon of turmeric powder
- 4 cups of chicken broth
- 1 cup of frozen peas
- Salt and pepper, to taste
- Chopped fresh cilantro, for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the chicken and cook until browned. Remove from the pot and set aside.

In the same pot, add the onion, garlic, bell pepper, and carrot. Cook until softened.

Stir in the curry powder and turmeric powder. Cook for another minute.

Add the rice to the pot and stir to coat it with the curry mixture.

Pour in the chicken broth and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes or until the rice is cooked.

Stir in the cooked chicken and frozen peas. Cook for another 5 minutes or until heated through.

Season with salt and pepper to taste.

Serve hot, garnished with chopped fresh cilantro.
