How To Make Coq au vin

Ingredients
- 4 chicken legs
- 4 slices of bacon, chopped
- 1 onion, sliced
- 2 carrots, sliced
- 2 cloves of garlic, minced
- 8 ounces of mushrooms, sliced
- 1 cup of red wine
- 1 cup of chicken broth
- 2 tablespoons of tomato paste
- 1 tablespoon of flour
- 1 tablespoon of butter
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

In a large pot, cook the bacon over medium heat until crispy. Remove and set aside.

Season the chicken legs with salt and pepper, then add them to the pot with the bacon fat. Cook until browned on all sides. Remove and set aside.

In the same pot, add the onion, carrots, and garlic. Cook until softened, about 5 minutes.

Add the mushrooms and cook for another 5 minutes.

Stir in the tomato paste and flour, cooking for 1 minute.

Pour in the red wine and chicken broth, scraping the bottom of the pot to release any browned bits.

Return the chicken and bacon to the pot. Bring to a simmer, then cover and cook for 1 hour.

Remove the lid and cook for an additional 30 minutes to thicken the sauce.

Stir in the butter until melted and incorporated into the sauce.

Serve the Coq au vin garnished with fresh parsley.
