Ingredients

  • 4 chicken breasts
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Season the chicken breasts with salt and pepper.

  2. In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook until browned on both sides, about 5 minutes per side. Remove from the skillet and set aside.

  3. In the same skillet, add the diced onion and minced garlic. Cook until the onion is translucent, about 2-3 minutes.

  4. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.

  5. Pour in the heavy cream and chicken broth. Stir in the dried thyme and rosemary. Bring to a simmer and cook for 5 minutes.

  6. Return the chicken breasts to the skillet and cook for an additional 10-12 minutes, or until the chicken is cooked through.

  7. Sprinkle the grated Parmesan cheese over the chicken and sauce. Allow it to melt for a minute or two.

  8. Serve the chicken with the creamy sauce, garnished with fresh parsley.
