Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 2 cups bread crumbs
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 4 tbsp olive oil
  • 4 cups romaine lettuce, chopped
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • Croutons, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Pound chicken breasts to an even thickness.

  3. In separate bowls, place flour, beaten eggs, and bread crumbs.

  4. Season bread crumbs with salt, black pepper, and paprika.

  5. Dredge each chicken breast in flour, then dip in beaten eggs, and coat with seasoned bread crumbs.

  6. Heat olive oil in a large skillet over medium heat.

  7. Fry breaded chicken breasts for 3-4 minutes on each side until golden brown.

  8. Transfer chicken to a baking sheet and bake in the preheated oven for 12-15 minutes until cooked through.

  9. In a large bowl, toss romaine lettuce with Caesar dressing until fully coated.

  10. Divide the Caesar salad among serving plates and top each with a cooked chicken breast.

  11. Sprinkle grated Parmesan cheese over the chicken and garnish with croutons.

  12. Serve immediately.
