How To Make Open Chicken Caesar Sandwich

Everybody loves fried chicken! There’s nothing like the crispy crackly exterior of each piece, coupled with the juicy meat inside. By itself, it’s already incredibly satisfying. What more if sandwiched in between two buns with a handful of other ingredients? You can even shred them up to stir into a saucy filling of some sort. Serves:

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 4 slices of bread (such as ciabatta or sourdough)
  • 1/2 cup Caesar dressing
  • 4 lettuce leaves
  • 4 slices of bacon, cooked and crumbled
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat grill or grill pan to medium-high heat.

  2. Brush chicken breasts with olive oil and season with salt and pepper.

  3. Grill chicken for about 6-8 minutes per side, or until cooked through.

  4. Remove chicken from grill and let it rest for a few minutes. Slice into thin strips.

  5. Toast the bread slices until lightly golden.

  6. Spread Caesar dressing on one side of each bread slice.

  7. Top with sliced grilled chicken, lettuce leaves, crumbled bacon, and grated Parmesan cheese.

  8. Place another bread slice on top to make a sandwich.

  9. Cut each sandwich in half diagonally and serve.
