How To Make Baked Honey & Lemongrass Chicken Bánh Mì

Ingredients
- 4 boneless, skinless chicken breasts
- 2 lemongrass stalks, crushed
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 tablespoon vegetable oil
- 1 tablespoon fish sauce
- 1 teaspoon five spice powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 4 small baguettes
- Mayonnaise, for spreading
- Pickled vegetables (carrots, daikon radish, cucumber)
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 425°F (220°C).

In a small bowl, combine the crushed lemongrass, minced garlic, soy sauce, honey, vegetable oil, fish sauce, five spice powder, black pepper, and salt.

Place the chicken breasts in a baking dish and pour the marinade over them, making sure they are coated evenly. Let the chicken marinate for at least 30 minutes.

Bake the chicken in the preheated oven for 15-20 minutes, or until cooked through and golden brown.

While the chicken is baking, slice the baguettes in half lengthwise and toast them in a toaster oven or under the broiler until lightly crispy.

Remove the chicken from the oven and let it rest for a few minutes before slicing it into thin strips.

Spread mayonnaise on the toasted baguettes and layer with the sliced chicken, pickled vegetables, and fresh cilantro.
