Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 jalapeños, seeded and finely chopped
  • 1 cup milk
  • 1/4 cup unsalted butter, melted
  • 2 eggs

Instructions

  1. Preheat oven to 400°F (200°C). Grease a 9-inch square baking dish.

  2. In a large bowl, combine cornmeal, flour, sugar, baking powder, salt, and chopped jalapeños.

  3. In a separate bowl, whisk together milk, melted butter, and eggs.

  4. Pour wet ingredients into the dry ingredients and stir until just combined.

  5. Pour the batter into the prepared baking dish and smooth the top.

  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool for a few minutes before serving.
