Ingredients

  • 2 ripe bananas
  • 1/2 cup of sugar
  • 1/4 cup of vegetable oil
  • 1/4 cup of plain Greek yogurt
  • 2 eggs
  • 1 tsp of vanilla extract
  • 1 cup of all-purpose flour
  • 1 tsp of baking soda
  • 1/2 tsp of ground cinnamon
  • 1/4 tsp of ground nutmeg
  • 1/4 tsp of ground cloves
  • 1/4 tsp of salt
  • 1/2 cup of chopped walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.

  2. In a large bowl, mash the bananas with a fork. Add sugar, vegetable oil, Greek yogurt, eggs, and vanilla extract. Mix well.

  3. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.

  4. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Fold in chopped walnuts, if desired.

  5. Pour the batter into the greased loaf pan.

  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool in the pan for 10 minutes. Transfer to a wire rack to cool completely before slicing.
