Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 tsp lemon zest
  • 1/4 tsp ground cinnamon
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a large mixing bowl, combine the flour, sugar, and salt.

  3. In a separate bowl, whisk together the melted butter, milk, eggs, vanilla extract, lemon zest, and ground cinnamon.

  4. Gradually add the wet ingredients to the dry ingredients and mix until well combined.

  5. If desired, fold in the raisins.

  6. Transfer the dough to a greased 9-inch round cake pan.

  7. Bake for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.

  8. Remove from the oven and let cool slightly before serving.
