  • 2 ripe bananas
  • 1 cup shredded zucchini
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.

  2. In a large bowl, mash the bananas with a fork. Add the shredded zucchini, vegetable oil, sugars, eggs, and vanilla extract. Mix until well combined.

  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.

  4. Gradually add the dry ingredients to the banana-zucchini mixture, stirring until just combined. Do not overmix.

  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.

  6. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Remove from the oven and let cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely before slicing.
