Ingredients

  • 1 lb beef stew meat, cubed
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 cup dried beans, soaked overnight
  • 1/4 cup barley
  • 1 bay leaf
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups beef broth

Instructions

  1. In a large pot or slow cooker, brown the beef stew meat over medium heat until browned on all sides.

  2. Add the onion and garlic to the pot and sauté until softened.

  3. Add the carrots, potatoes, dried beans, barley, bay leaf, paprika, thyme, salt, and black pepper to the pot.

  4. Pour the beef broth over the ingredients and stir well.

  5. Cover the pot and simmer on low heat for 8 hours, or until the meat is tender and the flavors have melded together.

  6. Serve hot and enjoy!
