Ingredients

  • 1 pound sweetbreads, soaked in cold water for 1 hour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 tablespoon unsalted butter
  • 1 clove garlic, minced
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a bowl, combine the flour, salt, and black pepper.

  2. Drain the soaked sweetbreads and pat them dry with paper towels.

  3. Dredge the sweetbreads in the flour mixture, shaking off any excess.

  4. In a large skillet, heat the vegetable oil over medium-high heat.

  5. Add the sweetbreads to the skillet and cook for about 4-5 minutes per side or until golden brown and crispy.

  6. Remove the sweetbreads from the skillet and set aside.

  7. In the same skillet, melt the butter over medium heat.

  8. Add the minced garlic and cook for 1 minute or until fragrant.

  9. Return the sweetbreads to the skillet and cook for an additional 2-3 minutes, tossing them occasionally to coat them in the garlic butter.

  10. Sprinkle the chopped parsley over the sweetbreads and toss to combine.

  11. Remove from heat and serve hot.
