Ingredients

  • 2 cups all-purpose flour
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 1 lb ground beef
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp oregano
  • 1/4 tsp red pepper flakes
  • Salt and pepper, to taste
  • 1/2 cup sliced black olives
  • 1/4 cup raisins
  • 1 egg, beaten

Instructions

  1. In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Gradually add ice water, 1 tablespoon at a time, tossing with a fork until dough forms a ball. Wrap in plastic wrap and refrigerate for 30 minutes.

  2. In a skillet, cook ground beef, onion, and garlic over medium heat until beef is no longer pink. Drain any excess fat. Add cumin, paprika, oregano, red pepper flakes, salt, and pepper. Cook for an additional 2 minutes. Remove from heat and stir in black olives and raisins. Allow mixture to cool.

  3. Preheat oven to 375°F (190°C). Roll out the dough on a floured surface to about 1/8-inch thickness. Cut out 4-inch rounds.

  4. Place about 2 tablespoons of the beef filling on one half of each round. Fold the other half over the filling, pressing the edges together to seal. Use a fork to crimp the edges. Repeat with remaining dough and filling.

  5. Place the empanadas on a baking sheet lined with parchment paper. Brush the tops with beaten egg. Bake for 20-25 minutes, or until golden brown.

  6. Serve hot and enjoy!
