Serves:
Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup almonds, chopped
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
-
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
-
In a large bowl, whisk together the flour, sugar, baking powder, salt, and chopped almonds.
-
In another bowl, beat the eggs and vanilla extract together. Gradually add the egg mixture to the dry ingredients and mix until a stiff dough forms.
-
Divide the dough in half and shape each portion into a 12-inch long log. Place the logs on the prepared baking sheet, leaving space between them.
-
Bake in the preheated oven for 25-30 minutes, or until the logs are lightly golden brown.
-
Remove from the oven and let the logs cool for about 10 minutes. Reduce the oven temperature to 325°F (165°C).
-
Using a serrated knife, cut the logs into 1/2-inch thick slices. Place the biscotti back onto the baking sheet, cut-side down.
-
Bake for an additional 10-15 minutes, or until the biscotti are crispy and golden.
-
Remove from the oven and let them cool completely on a wire rack. Enjoy!
