  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup almonds, chopped
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, sugar, baking powder, salt, and chopped almonds.

  3. In another bowl, beat the eggs and vanilla extract together. Gradually add the egg mixture to the dry ingredients and mix until a stiff dough forms.

  4. Divide the dough in half and shape each portion into a 12-inch long log. Place the logs on the prepared baking sheet, leaving space between them.

  5. Bake in the preheated oven for 25-30 minutes, or until the logs are lightly golden brown.

  6. Remove from the oven and let the logs cool for about 10 minutes. Reduce the oven temperature to 325°F (165°C).

  7. Using a serrated knife, cut the logs into 1/2-inch thick slices. Place the biscotti back onto the baking sheet, cut-side down.

  8. Bake for an additional 10-15 minutes, or until the biscotti are crispy and golden.

  9. Remove from the oven and let them cool completely on a wire rack. Enjoy!
