Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 eggs
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup chopped dried figs
  • 1/2 cup chopped almonds

Instructions

  1. Preheat oven to 350F and line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

  3. In another bowl, beat the eggs until frothy. Then, whisk in the oil and vanilla extract.

  4. Gradually add the wet ingredients to the dry, mixing until well combined.

  5. Mix in the chopped figs and almonds.

  6. Divide the dough in half and shape into two logs on the prepared baking sheet.

  7. Bake for 20-25 minutes, or until lightly golden and set.

  8. Remove from the oven and let cool for 5-10 minutes.

  9. Using a sharp knife, cut the logs into slices and lay them flat on the baking sheet.

  10. Bake for an additional 15-20 minutes, turning halfway through, until crisp and golden.

  11. Let cool completely before serving and store in an airtight container.
