How To Make Vegan Biscotti

A crunchy and delicious vegan biscotti recipe perfect for dipping into a cup of hot coffee or tea.

Ingredients

  • 1 ¾ cups all-purpose flour
  • ½ cup almond flour
  • ½ cup sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup chopped almonds
  • ¼ cup melted coconut oil
  • ¼ cup almond milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, and salt.

  3. Stir in the chopped almonds.

  4. In a separate bowl, whisk together the melted coconut oil, almond milk, and vanilla extract.

  5. Add the wet ingredients to the dry ingredients and mix until a dough forms.

  6. Divide the dough in half and shape each half into a log, about 12 inches long and 1 inch wide.

  7. Place the logs onto the prepared baking sheet, leaving space between them.

  8. Bake in the preheated oven for 25-30 minutes, or until the logs are golden brown.

  9. Remove from the oven and let cool for 10 minutes. Reduce the oven temperature to 325°F (160°C).

  10. Using a sharp knife, cut the logs into ½ inch thick slices.

  11. Place the slices back onto the baking sheet and bake for an additional 10-15 minutes, turning halfway through, until the biscotti are crisp and dry.

  12. Remove from the oven and let cool completely before serving.
