How To Make Delicata Squash and Kale Quinoa Recipe
A healthy and delicious combo of squash, kale and quinoa perfect for a cozy winter dinner.

Ingredients
- 1 delicata squash, halved and seeded
- 1 bunch kale, stems removed and leaves chopped
- 1 cup quinoa
- 2 cloves garlic, minced
- 2 tbsp olive oil
- salt and pepper to taste
- 2 cups vegetable broth
Instructions

Preheat oven to 375F.

Place squash halves on a baking sheet and drizzle with 1 tbsp of olive oil. Roast for 20 minutes until tender.

Rinse quinoa and place in a pot with vegetable broth. Bring to a boil, then reduce heat to a simmer and cover. Cook for 15 minutes or until the broth is absorbed and quinoa is tender.

In a large skillet, heat 1 tbsp of olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.

Add kale and sauté for 5 minutes until wilted.

Add quinoa to the skillet with kale and stir to combine. Season with salt and pepper.

Serve the quinoa mixture in the roasted squash halves.
