How To Make Delicata Squash and Kale Quinoa Recipe

A healthy and delicious combo of squash, kale and quinoa perfect for a cozy winter dinner.

Serves:

Ingredients

  • 1 delicata squash, halved and seeded
  • 1 bunch kale, stems removed and leaves chopped
  • 1 cup quinoa
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • salt and pepper to taste
  • 2 cups vegetable broth

Instructions

  1. Preheat oven to 375F.

  2. Place squash halves on a baking sheet and drizzle with 1 tbsp of olive oil. Roast for 20 minutes until tender.

  3. Rinse quinoa and place in a pot with vegetable broth. Bring to a boil, then reduce heat to a simmer and cover. Cook for 15 minutes or until the broth is absorbed and quinoa is tender.

  4. In a large skillet, heat 1 tbsp of olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.

  5. Add kale and sauté for 5 minutes until wilted.

  6. Add quinoa to the skillet with kale and stir to combine. Season with salt and pepper.

  7. Serve the quinoa mixture in the roasted squash halves.
