How To Make Seed and Herb Crusted Rack of Lamb Recipe

Juicy and tender lamb, coated in a mix of flavorful seeds and herbs for a crunchy crust.

Ingredients

  • 1 rack of lamb, frenched
  • 1/4 cup dijon mustard
  • 1 tbsp honey
  • 1/2 cup bread crumbs
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup chopped fresh herbs (rosemary, thyme, and parsley)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Mix dijon mustard and honey in a small bowl, and spread all over the lamb rack.

  3. In another bowl, combine bread crumbs, pumpkin seeds, sunflower seeds, herbs, salt and pepper.

  4. Press the seed mixture onto the lamb rack, covering all sides.

  5. Place the lamb rack onto a baking sheet lined with parchment paper, and roast in the oven for 20-25 minutes for medium rare.

  6. Let the lamb rest for 5-10 minutes before slicing and serving.
