Ingredients

  • 2 cups corn kernels, fresh or frozen
  • 1/2 red onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/4 cup apple cider vinegar
  • 1/4 cup honey
  • 1/4 teaspoon chili powder
  • Salt and pepper, to taste

Instructions

  1. In a large skillet, cook the corn over medium heat until tender, stirring occasionally.

  2. Add the onions and bell peppers and cook for another 3-4 minutes.

  3. In a small bowl, whisk together the apple cider vinegar, honey, chili powder, salt, and pepper.

  4. Pour the dressing over the corn mixture and stir to combine.

  5. Reduce the heat to low and simmer for 10 minutes.

  6. Serve warm or cold.
