How To Make Speckled Egg Sandwich Cookies Recipe
These cookies have a delicious speckled egg filling sandwiched between two creamy cookies.

Ingredients
- 1 cup all-purpose flour
- ½ cup unsalted butter, softened
- ⅓ cup granulated sugar
- 1 egg yolk
- 1 tsp vanilla extract
- ¼ tsp salt
- 1 cup powdered sugar
- 2 tbsp unsalted butter, melted
- 2 tbsp milk
- ½ cup malted milk eggs, crushed
Instructions

Preheat the oven to 350°F (180°C).

Cream the butter and sugar together until light and fluffy.

Mix in egg yolk and vanilla.

Add the flour and salt and mix until just combined.

Roll out the dough and cut circles using a cookie cutter.

Bake in the preheated oven for 10 minutes.

In a separate bowl, mix together powdered sugar, melted butter, and milk to create a filling.

Add crushed malted milk eggs to the filling.
