Ingredients

  • 1 lb asparagus spears, trimmed
  • 1 cup white vinegar
  • 1 cup water
  • 2 tbsp sugar
  • 2 tbsp kosher salt
  • 2 garlic cloves, sliced
  • 1 tsp dill seeds
  • 1/2 tsp black peppercorns
  • 1/2 tsp red pepper flakes

Instructions

  1. In a medium saucepan, bring water, vinegar, sugar, and salt to a boil.

  2. Add garlic, dill seeds, black peppercorns, and red pepper flakes to the boiling mixture.

  3. Blanch asparagus spears in boiling water for 1-2 minutes.

  4. Using tongs, transfer the asparagus to a sterilized jar.

  5. Pour the hot pickling liquid over the asparagus, covering them completely.

  6. Let the jar cool to room temperature, then cover and refrigerate for at least 24 hours before serving.
