How To Make Mixed Vegetable Ratatouille Recipe

A classic French dish of mixed vegetables stewed in tomato sauce.

Ingredients

  • 1 eggplant, diced
  • 2 zucchinis, sliced
  • 1 red bell pepper, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can crushed tomatoes
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Heat olive oil in a large pot.

  2. Add onions, garlic, and bell pepper and cook until onions are translucent.

  3. Add eggplant, zucchini, thyme, salt, and pepper. Cook for about 5 minutes or until vegetables are slightly tender.

  4. Add crushed tomatoes and bring to a simmer.

  5. Simmer for 35-40 minutes or until vegetables are fully cooked.

  6. Season with additional salt and pepper, to taste. Serve hot.
