Serves:

Ingredients

  • 2 leeks, chopped
  • 4 potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil and sauté the onion and garlic until softened.

  2. Add the leeks and potatoes, and cook for another 5 minutes.

  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 20 minutes, or until the potatoes are tender.

  4. Use an immersion blender, or transfer the soup to a blender, and blend until smooth.

  5. Stir in the milk and season with salt and pepper. Heat the soup for another 5 minutes.

  6. Serve hot, garnished with chopped fresh parsley.
