Ingredients
- 2 leeks, chopped
- 4 potatoes, peeled and diced
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup milk
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

In a large pot, heat olive oil and sauté the onion and garlic until softened.

Add the leeks and potatoes, and cook for another 5 minutes.

Pour in the vegetable broth and bring to a boil. Reduce heat and let simmer for 20 minutes, or until the potatoes are tender.

Use an immersion blender, or transfer the soup to a blender, and blend until smooth.

Stir in the milk and season with salt and pepper. Heat the soup for another 5 minutes.

Serve hot, garnished with chopped fresh parsley.
