  • 3 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions

  1. In a large pot, heat some oil over medium heat. Add the leeks, potatoes, onion, and garlic. Cook until the vegetables are softened, about 5 minutes.

  2. Add the vegetable broth and bring to a boil. Reduce heat and simmer for 20-25 minutes, or until the potatoes are tender.
