  • 2 leeks, white and light green parts only, thinly sliced
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 cup plant-based milk (such as almond or oat milk)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the leeks, onion, and garlic, and sauté until softened.

  2. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.

  3. Using an immersion blender or a regular blender, puree the soup until smooth and creamy. If using a regular blender, be sure to blend in batches and vent the lid to prevent hot soup from splashing.

  4. Return the soup to the pot and stir in the plant-based milk. Season with salt and pepper to taste.

  5. Simmer the soup for an additional 5 minutes to heat through.
