How To Make African Carrot Soup
A hearty soup that combines the sweetness of carrots with savory spices, all in a creamy broth.
Serves:
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp cinnamon
- ¼ tsp cayenne pepper
- 1 lb carrots, peeled and chopped
- 4 cups vegetable broth
- 1 can coconut milk
- Salt and pepper, to taste
- Cilantro, for garnish
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and saute until softened.

Add the spices and stir for about 1 minute, until fragrant.

Add the carrots and broth to the pot, and bring to a boil. Reduce heat and let simmer for about 30 minutes, until the carrots are tender.

Blend the soup until smooth using an immersion blender or regular blender. Return to the pot.

Add the coconut milk and stir until combined. Season with salt and pepper to taste.

Serve hot, garnished with cilantro.
