How To Make Bison Stew Recipe

Ingredients
- 1.5 lbs of bison stew meat, cut into cubes
- 2 tbsp of olive oil
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 cup of diced tomatoes
- 4 cups of beef broth
- 1 bay leaf
- 1 tsp of dried thyme
- salt and pepper to taste
- 2 tbsp of flour (optional, for thickening)
Instructions

In a large pot, heat the olive oil over medium heat. Add the bison meat and brown on all sides.

Remove the meat from the pot and set aside. In the same pot, add the chopped onion and garlic. Cook until the onion is translucent.

Add the diced carrots, celery, and tomatoes. Cook for a few minutes until the vegetables start to soften.

Return the browned bison meat to the pot. Pour in the beef broth and add the bay leaf and dried thyme. Season with salt and pepper.

Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 2 hours, stirring occasionally.

If desired, you can thicken the stew by mixing flour with a little water to make a slurry. Stir the slurry into the stew and cook for an additional 10 minutes.

Remove the bay leaf before serving. Enjoy!
