Ingredients

  • 1 lb ham, diced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups water
  • 2 bay leaves
  • 1 tsp thyme
  • 2 cans (15 oz) cannellini beans, drained and rinsed
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, sauté the ham over medium heat until browned.

  2. Add the onion, carrots, celery, and garlic. Cook until vegetables are tender.

  3. Pour in the chicken broth and water. Add the bay leaves and thyme. Bring to a boil.

  4. Reduce heat to low and simmer for 1 hour, stirring occasionally.

  5. Add the cannellini beans and continue to simmer for another 30 minutes.

  6. Season with salt and pepper to taste. Remove bay leaves.

  7. Serve hot, garnished with fresh parsley.
