How To Make Mushroom and Leek Soup

Ingredients
- 1 lb mushrooms, sliced
- 2 leeks, white and light green parts only, sliced
- 3 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tbsp butter
- Salt and pepper to taste
Instructions

In a large pot, melt the butter over medium heat. Add the mushrooms, leeks, and garlic. Sauté until the vegetables are tender, about 5 minutes.

Add the vegetable broth to the pot and bring to a boil. Reduce heat and simmer for 20 minutes.

Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, you can transfer the soup to a regular blender and blend in batches.

Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.
