How To Make Ropa Vieja in a Slow Cooker

Ingredients
- 2 lbs flank steak
- 1 onion, sliced
- 1 green bell pepper, sliced
- 3 cloves of garlic, minced
- 1 can (14 oz) crushed tomatoes
- 1 cup beef broth
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp oregano
- 1 bay leaf
- Salt and pepper to taste
Instructions

Season the flank steak with salt and pepper, then sear it in a hot pan until browned on all sides.

Place the sliced onions, bell pepper, and minced garlic in the slow cooker.

In a bowl, mix together the crushed tomatoes, beef broth, cumin, paprika, oregano, bay leaf, salt, and pepper. Pour the sauce over the vegetables in the slow cooker.

Place the seared flank steak on top of the sauce and vegetables.

Cover and cook on low heat for 8 hours, or on high heat for 4 hours, until the beef is tender and easily shreds with a fork.

Once the beef is cooked, remove it from the slow cooker and shred it using two forks.

Return the shredded beef to the slow cooker and stir it into the sauce and vegetables.

Serve the Ropa Vieja hot over rice or with tortillas. Enjoy!
