Ingredients

  • 1 small head of cauliflower, cut into florets
  • 2 large carrots, grated
  • 1/4 cup chopped fresh parsley
  • 1/4 cup sliced almonds
  • For the dressing:
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the cauliflower florets, grated carrots, parsley, and sliced almonds.

  2. In a separate small bowl, whisk together the olive oil, lemon juice, Dijon mustard, salt, and pepper until well combined.

  3. Pour the dressing over the salad and toss to coat all the ingredients evenly.

  4. Serve chilled and enjoy!
