Ingredients

  • 4 chicken breasts
  • 1 cup cherry tomatoes
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the chicken breasts with salt, pepper, dried oregano, dried basil, and dried thyme.

  3. In a large mixing bowl, combine the cherry tomatoes, bell pepper, zucchini, red onion, minced garlic, olive oil, salt, and pepper. Toss until well coated.

  4. Spread the vegetables evenly on a baking sheet and place the seasoned chicken breasts on top.

  5. Roast in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the vegetables are tender.

  6. Serve hot and enjoy!
