How To Make Mini Polenta Pizza Bites

Ingredients
- 1 cup instant polenta
- 2 cups water
- 1/2 tsp salt
- 1/2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- Your favorite pizza toppings (such as sliced olives, diced bell peppers, or pepperoni)
Instructions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a medium saucepan, bring the water to a boil. Gradually whisk in the polenta, salt, oregano, and basil. Reduce the heat to low and cook, stirring constantly, for 5 minutes or until thickened.

Pour the polenta onto the prepared baking sheet and spread it out evenly to form a rectangle about 1/4 inch thick. Let it cool for 10 minutes to firm up.

Using a round cookie cutter or the rim of a glass, cut out mini polenta circles and place them back on the baking sheet.

Top each polenta circle with a spoonful of marinara sauce, a sprinkle of mozzarella cheese, and your desired toppings.

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.
