How To Make The Perfect Picnic Pasta Salad

Ingredients
- 8 ounces rotini pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup black olives, sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup feta cheese, crumbled
- for the dressing:
- 1/4 cup extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
Instructions

Cook the rotini pasta according to package instructions. Drain and set aside to cool.

In a large bowl, combine the cherry tomatoes, cucumber, red onion, black olives, and fresh basil.

In a small bowl, whisk together the olive oil, red wine vinegar, garlic, Dijon mustard, dried oregano, salt, and pepper to make the dressing.

Add the cooled pasta and feta cheese to the bowl with the veggies. Pour the dressing over the salad and toss to combine.

Chill in the refrigerator for at least 1 hour before serving.
