How To Make Mexican Pasta Recipe

Ingredients
- 8 oz penne pasta
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 jalapeno, seeded and minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1 can (14 oz) diced tomatoes
- 1 cup corn kernels
- 1 cup black beans
- 1/2 cup chopped cilantro
- Salt and pepper to taste
- Shredded cheese, for serving
Instructions

Cook the penne pasta according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, red bell pepper, and jalapeno. Cook until the vegetables are tender, about 5 minutes.

Add the chili powder, cumin, and paprika to the skillet. Cook for another minute to toast the spices.

Stir in the diced tomatoes, corn kernels, and black beans. Simmer for 10 minutes to allow the flavors to meld together.

Add the cooked pasta to the skillet and toss to combine. Season with salt and pepper to taste.

Serve the Mexican pasta hot, garnished with chopped cilantro and shredded cheese.
