How To Make Smoky Sausage Casserole

Ingredients
- 4 smoky sausages
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 can of chopped tomatoes
- 1 cup of chicken broth
- 1 tsp of smoked paprika
- 1 tsp of dried thyme
- Salt and pepper to taste
- 1 tbsp of olive oil
- Fresh parsley for garnish
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides. Remove the sausages from the skillet and set aside.

In the same skillet, add the diced onion, minced garlic, and diced red bell pepper. Cook until the vegetables are softened, about 5 minutes.

Add the chopped tomatoes, chicken broth, smoked paprika, dried thyme, salt, and pepper to the skillet. Stir to combine.

Slice the cooked sausages into bite-sized pieces and add them back to the skillet. Mix well.

Transfer the mixture to a casserole dish and cover with aluminum foil.

Bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes to allow the top to brown slightly.

Garnish with fresh parsley before serving.
