How To Make Spatchcocked Chicken with Soft Cheese & Basil

Ingredients
- 1 whole chicken
- 1 cup of soft cheese (such as boursin or goat cheese)
- 1/4 cup of fresh basil, chopped
- Salt and pepper, to taste
Instructions

Preheat your oven to 425°F (220°C).

Place the chicken breast-side down on a cutting board. Use kitchen shears or a sharp knife to cut along both sides of the backbone and remove it.

Flip the chicken over and press down on the breastbone to flatten it. This is called spatchcocking.

Season the chicken with salt and pepper on both sides.

In a small bowl, mix together the soft cheese and chopped basil. Spread this mixture evenly over the skin side of the chicken.

Place the chicken on a baking sheet, skin-side up, and roast in the preheated oven for 45 minutes or until the internal temperature reaches 165°F (74°C).

Remove the chicken from the oven and let it rest for 10 minutes before slicing and serving.
