How To Make Greek Lamb with Potatoes & Olives

Ingredients
- 2 lbs of boneless lamb shoulder, cut into cubes
- 4 large potatoes, cut into wedges
- 1 cup of pitted kalamata olives
- 1 onion, thinly sliced
- 4 cloves of garlic, minced
- 2 cups of chicken broth
- 1 lemon, juiced
- 2 tbsp of olive oil
- 2 tsp of dried oregano
- 1 tsp of dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 325°F (160°C).

In a large oven-safe Dutch oven, heat the olive oil over medium-high heat.

Season the lamb with salt and pepper, then brown the cubes on all sides in the Dutch oven. Remove the lamb and set aside.

Add the sliced onion and minced garlic to the Dutch oven and cook until softened and fragrant.

Return the lamb to the Dutch oven and add the potatoes, olives, dried oregano, dried thyme, and lemon juice. Mix well.

Pour in the chicken broth and bring to a simmer.

Cover the Dutch oven with a lid and transfer to the preheated oven.

Cook for 1.5 to 2 hours, or until the lamb is tender and the potatoes are crispy.

Remove from the oven and let it rest for a few minutes before serving.
