How To Make Star Anise and Gingerbread Cupcakes

Deliciously spiced cupcakes with the warmth of star anise and gingerbread.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground star anise
  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed light brown sugar
  • 1/4 cup molasses
  • 2 large eggs
  • 1/2 cup buttermilk

Instructions

  1. Preheat oven to 350°F. Line a cupcake tin with paper liners.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, and star anise.

  3. In a large bowl, cream together butter, brown sugar, and molasses until light and fluffy.

  4. Beat in the eggs, one at a time, until well incorporated.

  5. Gradually stir in the flour mixture, alternating with the buttermilk, beginning and ending with the flour.

  6. Spoon batter into prepared cupcake tin, filling each liner about 2/3 full.

  7. Bake for 20-25 minutes until a toothpick inserted into the center of a cupcake comes out clean.

  8. Let cupcakes cool in pan for 5 minutes, then transfer to a wire rack to cool completely before serving.
