Ingredients

  • 1 zucchini, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons of olive oil
  • 1 tablespoon of minced lemongrass
  • 1 teaspoon of ground turmeric
  • 1 teaspoon of salt
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, mix all the vegetables, olive oil, lemongrass, turmeric, salt, and black pepper.

  3. Spread the vegetables out evenly on a baking sheet.

  4. Roast for 40 – 45 minutes, or until the vegetables are golden brown and tender.

  5. Serve hot with your favorite main course.
