Ingredients
- 1 zucchini, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons of olive oil
- 1 tablespoon of minced lemongrass
- 1 teaspoon of ground turmeric
- 1 teaspoon of salt
- Black pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, mix all the vegetables, olive oil, lemongrass, turmeric, salt, and black pepper.

Spread the vegetables out evenly on a baking sheet.

Roast for 40 – 45 minutes, or until the vegetables are golden brown and tender.
